Jacksonville, Florida – V Pizza, a beloved local chain known for its hand-made, wood-fired pizzas, is set to change its pizza dough recipe following feedback from customers. The decision comes after over a decade of using the same dough formula, which some patrons have described as “soggy.”
The owners of V Pizza made the announcement via social media on Sunday, revealing that they have received repeated requests regarding the texture of their dough since opening 11 years ago. Despite the restaurant’s success, the feedback regarding the pizza’s crust led the team to take action.
To better understand customer preferences, the owners conducted a quick survey over a two-week period. They posed a simple question to customers at one of their restaurant locations: “Would you rather have a ‘classic Napoletana’ crust or a firmer version of the same Napoletana crust?” The results were telling—out of over 1,400 customer interactions, approximately 90% favored the firmer crust option.
The owners expressed that while they were not surprised by the results, they were taken aback by the overwhelming majority preferring a different crust than what had been offered. “It was a major revelation,” they explained, adding that this feedback represents an opportunity to refine their menu and satisfy customer desires.
The changes to V Pizza’s dough will not affect the core ingredients. The owners confirmed they will continue using high-quality Italian flour — specifically Caputo 00 flour, along with sea salt, yeast, and distilled water. However, they will introduce extra virgin olive oil into each dough batch. The owners intend to adjust the ingredient ratios and the proofing process, aiming to create a firmer texture that addresses customers’ concerns about the crust.
“Our goal is to make a pizza crust that is less watery, while still maintaining the delicious flavor V Pizza is known for,” they stated.
As they prepare to implement these changes in the coming weeks, the owners recognize that many longtime customers may resist the idea of altering a beloved recipe. They are asking for understanding and patience as they transition to the new formula. “Change can be tough, but we are optimistic that even our most dedicated fans will appreciate the slight adjustments,” they wrote.
In addition to pizza, V Pizza offers a variety of other dishes, including wings, calzones, pasta, salads, and desserts, which remain popular among diners.
Despite concerns about the change, the owners view the feedback as an encouraging sign for V Pizza’s growth. They believe that adjusting the pizza crust could further enhance their standing in the competitive Jacksonville dining scene. “If we can make a firmer crust that people enjoy, just imagine the potential for everything else we have to offer,” they concluded.
V Pizza aims to build on its successful foundation by providing customers with a pizza that aligns more closely with their preferences, hoping to maintain its reputation as one of Jacksonville’s top pizza destinations.
